In delivery, the packed bag is the only thing the customer sees. We train packers on a brand-wise packing matrix and put a dedicated accuracy check at the pass during peaks.
Prep must be complete before each wave, so prep crew start well before the peak and line cooks and packers are at full strength through it. Mid-afternoon runs on a core crew.
Rain, big cricket nights and festivals push order volumes up with little warning. A floating pool across nearby kitchens covers these without permanent headcount.
Late hours depend on your State’s Shops and Establishments rules and any 24×7 notification. Women can work late shifts only with written consent and prescribed safety measures such as transport home.
Hours beyond 8 a day or 48 a week are overtime at twice the ordinary wage rate. Planned late-night blocks are cheaper than stretching the evening crew.

A note on the law: for a cloud kitchen, cooking is a core activity, and under Section 57 of the OSH Code (which replaced the Contract Labour Act from 21 November 2025) contract labour in core work is allowed mainly for part-time requirements, sudden increases in volume, or work normally done through contractors. Peak blocks and new-kitchen launches usually fit; a fully contracted year-round crew deserves a legal view. Contractor licensing also sits under the OSH Code now (formerly CLRA) — ask any vendor for its licence status.
